Our wines are made with minimal intervention. They are alive — and like all living things, they reward a little care and attention.

01 / Storage

Keeping your wine
at its best

Natural wines are more sensitive to heat, light, and movement than conventional wines. A little care means the wine you open will taste exactly as intended.

Temperature
10 – 14 °C
Cool and consistent. Avoid near the oven or a sunny window.
Position
Upright
Away from direct light and vibration.
Light
Dark
UV degrades wine quickly. A cupboard or pantry is ideal.
Drink within
1 – 2 years
Made for near-term enjoyment, not long cellaring.

No added sulphites — handle gently and avoid transporting in a hot car.

02 / After opening

Once the bottle
is open

Natural wines can turn faster than conventional wines — but they also evolve beautifully over an evening.

Reseal tightly
Use the original cork or a wine stopper. Any air gap accelerates oxidation.

Refrigerate immediately
Even reds benefit from the fridge once opened. Take out 30 minutes before the next serving.

Drink within 2 – 3 days
Best within 48 hours. Whites and rosés fade faster; reds can hold a little longer.

Watch for change, not fault
A slight haze, sediment, or gentle fizz is normal. A vinegar smell or flat flavour means it has turned.
03 / Decanting

Opening up
the reds

Saperavi, Ojaleshi, and Chkhaveri Red are structured and benefit from breathing before you pour.

Remove from fridge early
Take out 30 – 45 minutes before serving. Reds open up at 16 – 18 °C.
ii
Decant 15 – 30 minutes before
Pour gently into a decanter or wide-mouthed jug. Saperavi especially benefits — it can seem tight straight from the bottle.

Watch for sediment
Natural reds often settle. Stop pouring when you see it reaching the neck, or decant against a light source.

No decanter? No problem.
Open 20 minutes early and let it sit, or pour into a large glass and swirl gently.
